Ingredients

Potato soup base
  • 3 lb russet potatoes peeled and cubed
  • 1 onion diced
  • 4 garlic cloves minced
  • 4 cup chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup heavy cream
  • 8 oz cream cheese cubed
  • 1.5 cup shredded cheddar
Toppings
  • 0.25 cup sour cream
  • 0.75 cup extra cheddar for topping
  • 0.25 cup bacon bits for topping
  • 0.25 cup green onions sliced

Equipment

  • 1 slow cooker

Method

Cook potatoes in the slow cooker
  1. Add russet potatoes, onion, garlic, chicken broth, salt, black pepper, garlic powder, and onion powder to the slow cooker and stir to combine. Ensure the potatoes are mostly submerged in the broth so they cook evenly.
  2. Cook on Low for 6-8 hours until the potatoes are very tender, or cook on High for 3-4 hours. The soup is ready when you can easily break a potato chunk apart with a spoon.
  3. Use a potato masher to partially mash the soup to your desired consistency, leaving some chunks intact. This creates a thick, creamy body without turning the soup fully smooth.
Make it creamy
  1. Stir in cream cheese and heavy cream, then continue stirring until the cream cheese melts completely. Look for the mixture to turn glossy and smooth with no visible cream cheese lumps.
  2. Add shredded cheddar and stir until melted, then taste and adjust seasoning. Stop when the cheese is fully incorporated and the soup looks thick and pourable.
Serve
  1. Ladle the potato soup into bowls and top with sour cream, extra cheddar, bacon bits, and green onions. Serve immediately while the cheddar and toppings look fresh and bright.

Notes

For the creamiest texture, mash while the potatoes are still hot, then melt the cream cheese and heavy cream thoroughly before adding cheddar. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat gently on the stove or microwave, adding a splash of broth if it thickens. Freezing isn’t recommended because dairy can break after thawing. For a lighter option, use reduced-fat cream cheese and half-and-half in place of heavy cream.
