Build the soup
- Combine bone-in chicken thighs, carrots, celery, onion, garlic, fresh ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne in a large pot. Bring to a boil, then reduce to a simmer.
- Simmer 30 minutes until the chicken is very tender, keeping the broth at a steady bubbling simmer for even cooking. Skim any foam if it forms for a clearer broth.
Shred and cook noodles
- Remove the chicken, shred the meat, and discard bones and skin. Return the shredded chicken to the pot so it can mingle with the broth.
- Add egg noodles and cook 6-8 minutes until tender, stirring occasionally to prevent sticking. Keep the broth gently bubbling during cooking.
Wilt greens and finish bright
- Stir in kale or spinach and cook 3 minutes until wilted. Make sure the greens are evenly submerged so they soften consistently.
- Stir in lemon juice, apple cider vinegar, and honey, then season with salt to taste. Taste and adjust salt before serving.
- Serve hot with extra lemon wedges and fresh parsley. Spoon broth and chicken with noodles and greens into each bowl.
Notes
Pro tip: for the most tender chicken, keep the soup at a gentle simmer (not a hard boil) during the 30-minute cook. Refrigerate in a covered container up to 4 days; reheat gently on the stovetop and add a splash of broth if it thickens. Freezing is not recommended because egg noodles can turn soft; for a freezer-friendly version, cook noodles separately and add when reheating. Dietary swap: use low-sodium chicken broth and skip added salt for a lower-sodium option.
