Ingredients

Frozen soup base
  • 1 bag (32 oz) frozen diced hash browns do not thaw
  • 1 onion, diced
  • 4 clove garlic, minced
  • 4 cup chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Creamy finish
  • 8 oz cream cheese, cubed
  • 0.5 cup sour cream
  • 1.5 cup shredded cheddar
Toppings
  • 1 bacon, cheddar, and green onions for topping

Equipment

  • 1 slow cooker

Method

Slow-cook the hash browns
  1. Add frozen diced hash browns (straight from the freezer), diced onion, minced garlic, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and black pepper to the slow cooker. Stir to combine so the seasonings are evenly distributed.
  2. Cook on Low for 6-8 hours, or High for 3-4 hours, until the hash browns are very tender. Stir once during cooking if you notice dry pockets on the edges.
Mash and melt in the dairy
  1. Mash the soup to your desired consistency using the back of a spoon or potato masher. Keep mashing until it thickens to your preferred texture.
  2. Stir in cubed cream cheese, sour cream, and shredded cheddar until everything is melted and smooth. Continue stirring until no cream cheese streaks remain.
Season and serve
  1. Taste and adjust seasoning with additional salt and black pepper if needed. Aim for a balanced, savory flavor.
  2. Serve hot, topped with bacon, extra cheddar, and green onions. Add the toppings right before eating so they stay distinct.

Notes

Pro tip: For the thickest spoonable texture, mash more of the tender hash browns before adding the dairy. Store leftovers in the fridge up to 3 days; reheat gently on the stovetop or in the microwave, stirring often. Freezing is not recommended because the creamy dairy can separate after thawing. For a lighter option, use reduced-fat cream cheese, sour cream, and cheddar while keeping the same cooking method.
