Ingredients
  

Soup base
  • 1.5 lb chicken breast or thighs Diced.
  • 1 onion Diced.
  • 4 garlic Minced.
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 0.5 tsp dried oregano
  • 0.25 tsp red pepper flakes
  • 8 lasagna noodles Broken into pieces.
Cheese dollop
  • 1 cup ricotta
  • 1 cup shredded mozzarella
  • 0.25 cup parmesan
  • 1 fresh basil For the dollop (use extra for topping if desired).
  • 1 salt To taste.
  • 1 pepper To taste.
Cooking
  • 1 tbsp olive oil For cooking the chicken and sautéing aromatics.

Method
 

Brown the chicken
  1. Heat olive oil in a large pot over medium-high heat, then add diced chicken and cook until browned, about 6-8 minutes. Remove the chicken to a plate or bowl and set aside.
Sauté aromatics
  1. In the same pot, sauté diced onion over medium heat for 4 minutes. Add minced garlic and tomato paste and cook for 2 minutes, stirring until fragrant.
Build the tomato broth
  1. Add crushed tomatoes, diced tomatoes, chicken broth, Italian seasoning, dried basil, dried oregano, and red pepper flakes. Bring everything to a boil over high heat, then maintain a steady boil for 30 seconds.
Cook the noodles
  1. Return the browned chicken to the pot, then add broken lasagna noodles. Simmer over medium heat for 10-12 minutes, stirring occasionally, until noodles are tender and chicken is cooked through.
Season and finish
  1. Season the soup with salt and pepper to taste. Turn off the heat and let it settle for 1 minute so the flavors meld.
  2. Mix the cheese dollop by combining ricotta, shredded mozzarella, and parmesan. Stir in fresh basil, then serve the soup in bowls with a generous spoonful of the cheese mixture that melts into the center; add extra basil or parmesan if desired.

Notes

Pro tip: break the lasagna noodles into small bite-size pieces for quicker tenderness and a soupier texture. Store leftovers in the fridge up to 3 days; reheat gently on the stove, adding a splash of broth if needed. Freezing is not recommended because noodles can soften too much, but you can freeze the soup base (without adding noodles) and cook noodles fresh when reheating. For a lighter option, use part-skim mozzarella and reduce the ricotta slightly for a lower-fat cheese dollop.
