Brown the beef and start the vegetables
- Brown the ground beef in a large pot until cooked through; drain the fat and set the beef aside. Visual cue: the beef should look browned and no pink remains.

Notes
For extra thickness, mash more of the potatoes after simmering—aim for about one-third mashes for a creamy texture. Refrigerate leftovers in an airtight container up to 4 days; freeze up to 2 months, though the texture may be slightly less creamy when reheated. For a lighter option, use half-and-half instead of heavy cream and reduce shredded cheddar to 1 cup.
